Cocina is a restaurant located in Pooler, Ga created with a modern expression of Mexican tradition.

 

Rooted in craftsmanship, inspired by heritage, and designed to feel like home. Guided by the spirit of the Golondrina, we bring people together through thoughtful dishes, bold flavor, and intentional design.

Made to Gather

Inspired by Mexico

Before the first recipe was perfected or the first guest walked through our doors, there was a vision.

 

The inspiration for Cocina came from the colorful artistry and architectural beauty found throughout Mexico. Influenced by the vibrant blue and white Talavera tilework, timeless archways, handcrafted materials, and the rich artisan traditions that can be experienced throughout Puebla, our goal was to create a contemporary hacienda that feels authentic, inviting, and unforgettable.

 

Every element of the restaurant was intentionally designed to tell a story. The handcrafted tile, warm wood tones, natural textures, soft lighting, and architectural details work together to create an atmosphere that honors tradition while embracing modern elegance. More than simply designing a beautiful restaurant, the vision was to create a place where families gather, friendships grow, milestones are celebrated, and every guest feels a genuine sense of belonging.

 

While Cocina was founded by Eric Soto and Juan Avalos, the restaurant's concept, visual identity, and interior design were thoughtfully developed to bring that vision to life. Every color, material, and design element was carefully selected to create an experience that is as memorable as the food itself.

The Founders

Great restaurants are built by people whose passion is shaped through years of dedication.

Originally from Aguadilla, Puerto Rico, Eric Soto has spent more than sixteen years mastering the art of Mexican cuisine. His culinary journey has been defined by a deep respect for authentic flavors, traditional cooking techniques, and the craftsmanship that transforms simple ingredients into exceptional dishes. His commitment to quality and consistency is reflected in every meal served at Cocina.

Originally from San José de la Paz, Jalisco, Juan Avalos brings nearly fifteen years of experience in the Mexican restaurant industry. Beginning his career as a busser before advancing to food runner, server, and eventually taking on the responsibilities of an assistant manager, Juan developed a profound appreciation for hospitality and guest service. He believes that exceptional dining extends beyond the food and begins with making every guest feel welcomed, valued, and cared for.

Although their journeys were different, Eric and Juan shared the same dream. They wanted to create a restaurant that honored authentic Mexican cuisine while offering an elevated dining experience rooted in genuine hospitality. Through years of perseverance, sacrifice, and hard work, that dream became Cocina.
